Loosely translated, the word ‘santoku’ means ‘three virtues’ or ‘three uses’ - slicing, dicing and mincing. The blade design is a Japanese adaptation of the more commonly known western style chef’s knife. Santokus generally have straighter edges, are thicker than chef’s knives and have a blunted sheep’s foot style blade. This knife is a general purpose workhorse in the kitchen and can accomplish all the tasks of the more commonly known chef’s knife.
